Cowboy Smoked Brownies
 
    	Cooking on a BBQ pit is truly a rewarding experience, especially when you've mastered the art of controlling pit temperature. One of my favorite experiments is smoking brownies, which adds a delightful smoky flavor to this classic dessert.
Recently, during a birthday celebration for a friend at our family ranch, I decided to whip up a batch of smoked brownies. Here's how I did it:
Preheat the Grill: Heat the grill to 350°F with an indirect heat zone.
Melt Butter: In a saucepot on the grill, melt the butter.
Prepare Batter: In a large bowl, combine chocolate chips and sugar. Pour the melted butter over them and whisk until the chocolate is fully melted. Whisk in the eggs and stout, then fold in the cocoa, flour, and baking powder.
Prepare the Pan: Line a cast iron pan with foil and spray it with cooking spray. Pour the brownie batter into the prepared pan.
Bake: Place the pan in the 350°F grill over indirect heat and bake for 25-30 minutes or until a toothpick comes out clean.
Now, let's move on to the fudge frosting:
Prepare Fudge Frosting: Place chocolate in a bowl. Bring cream and stout to a boil in a small saucepot. Pour the hot cream and stout over the chocolate. Let it stand for 3 to 5 minutes, then gently stir until smooth.
Frost the Brownies: Pour the fudge frosting over the cooled brownies and sprinkle with sea salt.
Chill: Place the pan in the fridge until the fudge has hardened.
Serve and Enjoy: Once the fudge has set, lift the brownies out of the pan, peel off the foil, slice, and enjoy your unique smoked brownies!
