Javier's sizzling fajita recipe!

    	Hello, friends! Last month, we received a lot of reviews about my brisket recipe, so I wanted to share my Fajita recipe!
I love to shop at my local meat markets. This week, I purchased my fajitas from The Bergheim Meat Market, which is about 15 minutes from Main Street Boerne. The Bergheim Meat Market building was built around 1903. It used to be the general store and post office until the official opening of The Bergheim Meat Market in January 2021. The Bergheim offers all sorts of spices, vegetables, your traditional cuts of meat, but you can also get exotic Texas-grown axis deer, nilgai antelope, and alligator tails. But back to the recipe – I was only feeding my wife and me, so I got 1.5 lbs of beef skirt.
When I got home, I let the fajitas rest to room temperature. As they rested, I used General's Hot Sauce as a binder, then spread it evenly. Next, I used AW Shit spices and spread them evenly. After doing that, I fired up the BBQ pit and set the temperature to 375 degrees. Once the pit reached 375 degrees, I placed the fajitas on the grill for approximately 10 minutes, then flipped them for an additional 8 minutes. I took them out of the pit, placed them on the cutting board, and let them rest for about 5 to 10 minutes. Then I cut them across the grain, added them to tortillas, added a little Pico, and voilà – Bon Appétit!
